S'mores Kefir Mousse Cups

Melt the Chocolate
2 In a heat-safe bowl, melt the chocolate using a double boiler or microwave in 30-second increments, stirring until completely smooth.
Cool & Whisk
4 Let the chocolate cool for 2–3 minutes. Slowly whisk it into the kefir until smooth and fully blended. (Optional: add a splash of vanilla extract or a little maple syrup for extra sweetness.)
Chill the Mousse
6 Pour the mousse into a bowl, cover, and refrigerate for at least 2 hours until thickened to a pudding-like texture.
Layer the Cups
8 In small jars or ramekins:
9 Add crushed graham crackers.
10 Spoon in a thick layer of chocolate kefir mousse.
11 Sprinkle with mini chocolate chips.
12 Top with mini marshmallows.
Serve or Store
14 Enjoy immediately, or refrigerate for up to 2 days. For a toasted marshmallow twist, carefully toast the tops with a kitchen torch just before serving!
