Golf Jello Cups

Bloom the Gelatin
1 In a small bowl, sprinkle the gelatin over 1 cup of cold water. Let it sit for about 5 minutes to bloom. The mixture will thicken to a soft, applesauce-like consistency.
Make the Jello Base
3 In a small saucepan, heat 2 cups of water until just below boiling. Turn off the heat and whisk in the honey, lime juice, and the bloomed gelatin until fully dissolved. Add green spirulina powder (starting with ½ teaspoon) and stir well, adding more as needed until you reach your desired green hue.
Pour and Set
5 Arrange your plastic cups on a baking sheet for easy transport. Carefully pour the jello mixture into each cup, filling them about three-quarters full. Transfer the tray to the refrigerator and chill for at least 4 hours, or until completely set.
Decorate and Serve
7 Just before serving, insert a paper flag toothpick into each cup and place a white sprinkle on top to resemble a golf ball. Serve chilled and enjoy!
